If you don’t have a fondue pot, you can use a regular pot wrapped in a towel and set on a trivet. For the fondue forks, skewers will work just fine.
When heating the cream, make sure to get it steaming hot and bubbling around the edges, but avoid overheating it, as it can scorch and develop an off flavor.
Prep Your Chocolate and Add Extra Flavor
Before melting the chocolate, make sure it is well-chopped and at room temperature. Good quality chocolate will result in a better tasting fondue.
Consider adding a big pinch of salt and, if desired, a pinch of espresso powder to enhance the flavors of the chocolate.
Avoid using chocolate that is too dark, as it can result in a less creamy fondue. Stick with chocolate that is roughly 75% cocoa or lower.
